I have been searching for an authentic sesame chicken recipe, the kind that I can order from the Chef's Specialties menu at a Chinese restaurant. None of the recipes I have tried ever come close to that delicious redish brown sauce and crispy chickwen underneath. Will you share the secret with me?

3/9/2000 Albert and Linda, I'm finally getting around to checking out your web site. It is as impressive as the food you serve. Thank you for staying in Hampton Township after the tragic fire. We've enjoyed your cuisine, and your friendship since you first opened here. You've sent me home with Won Ton soup for my daughter when she had her tonsils out, and when she worked for you, she enjoyed it very much. Keep up the good work.

Al What a great job you are doing! When we first moved to here to Penn. I thought, "oh no, I will never get chinese food like that in NYC". However your restaurant had me pleasantly surprised. Your wife is a joy to talk to and we LOVE going to your place. Thanks Al.

All these years and I realized I've never signed your guestbook. It's wonderful to be able to enjoy the great food and atmosphere of your restaurant, provided by yourself and your lovely wife...we almost feel like family. Willy LOVES your brown AND white rice (fried and steamed) and wouldn't consider a visit complete without his favorite eggroll. We older folks go for the spicy szechuan fare, and Mikey says your Moo Goo Gai Pan is the best EVER! Now that Heather and Jen are older, they love coming up to dine 'with class' with their friends. And wether I'm having a leisurely lunch with my sister Patty, or bringing family and friends from out of town, I always know we will have a superior dining experience. Your great recipe links allow me to try chinese cooking at home, tho for the 'real thing' there's only one place to go..."The China Bistro"! Thanks again! The Hoffman's

My absolute favorite Chinese food is Chicken with Broccoli. Here in NYC they make it with the same brown sauce they use with the Beef with Broccoli. How on earth can I learn to make this great sauce? I can get the chicken and the broccoli right, but not the sauce. This brown sauce doesn't have any vegetables in it, except some restaurants add scallions. I would be forever indebted to you if you could tell me how this brown sauce is made. I am spending a fortune buying it from the restaurants here, where I prefer to not eat from since they make pork and seafood, which I do not eat. Hope you can help me out. I have linked to your site at World of Recipes. --Gina

Ni tzao, Albert! I just took one look at your home page, and I =know= I'm going to like it here by looking at the subjects. Instantly bookmarked it. Have spent some time in Shanghai; enjoyed the true Chinese cuisine so much that I have recreated some of the dishes. Hope to pass some on for your critique. The =real= food of China is so difficult to find here in the U.S.
